“Lemon Coconut Muffins” from a Billet Mom’s Kitchen

If you like lemon you will love these muffins.  They won’t last long so you may want to double up on this recipe.    They are one of my favourites and are among one of the muffins requested the most at our house.

“Lemon Coconut Muffins” Ingredients 

1 3/4 cups  all purpose flour

3/4 cup sugar

1 teaspoon baking powder

3/4 teaspoon baking soda

1/4 teaspoon salt

3/4 cup sugar

1 cup lemon or vanilla yogurt

1 egg

1/3 cup butter, melted

1 to 2 Tablespoons grated lemon peel

1 Tablespoon lemon juice

1/2 cup flaked coconut

TOPPING

1/3 cup lemon juice

1/4 cup sugar

1/4 cup flaked coconut, toasted

“Coconut Lemon Muffins” Directions

  1. Preheat oven to 350º F.
  2. In a large bowl combine the flour,  baking powder, baking soda and salt.
  3. In a small bowl beat together the sugar, yogurt, egg, butter, lemon peel and lemon juice until smooth.  Stir this mixture into the dry ingredients just until moistened.  Fold in the coconut.
  4. Fill paper lined muffin cups two thirds full.
  5. Bake for 20 – 25 minutes or until golden brown and a toothpick inserted near the center comes out clean.
  6. Cool for 5 minutes before removing from pan to a wire rack.
  7. Toast coconut in oven.
  8. In a saucepan combine the lemon juice and sugar.  Cook and stir over medium heat until sugar is dissolved.  Stir in coconut.  Using a fork poke 6 to 8 holes in each muffin.  Spoon the coconut mixture over muffins.  Serve warm or cool to room temperature.

“Coconut Lemon Muffins” Notes and Tips

  1. Lemon yogurt is best for a real lemon flavour.
  2. The more lemon zest the better.  I use 2-3 Tablespoons and add a teaspoon of it to the topping.
  3. If you don’t want to make muffins put the batter into a pre-greased and floured loaf pan.  Double your baking time.  Check after 40 minutes using a toothpick inserted into the centre and if it comes out clean they are done.
